Obviously it is not a dish for vegetarians, but the good news, that is 100% guaranteed to not make you fat, so even if you value your line and that of your children, you can splurge on to sample this local specialty with no regrets!

800 g of clean tripe (You can find it from the butcher or supermarket)
2 stalks of celery
3 carrots
1 white onion
100 g ‘’cannellini’’ beans
100 g of green beans
extra virgin olive oil
white vinegar or balsamic vinegar (whatever you prefer)
parsley
basil
fresh tomatoes
